Valentine Sweets

Whenever I have some egg whites on hand, I love to make some meringues. They are such a light and tasty cookie that you can enjoy guilt-free since they are very low in fat! The delicate texture and lightly sweet flavor is perfect for a little treat. They melt in your mouth so perfectly – yum!

My Husband’s Birthday Pie

It was my husband’s birthday on Friday, and every year I make him a special Birthday Pie. He loooooves his chocolate meringue pie, and this is the best, most decadent recipe I’ve been able to find. It’s a little bit of a production to make the whole thing, but the result is sooooo worth it. Just remember to plan ahead because you can and should make most of it a day in advance so that the filling has time to set. The results are unbelievably chocolatey, light, creamy, and delicate. I hope you enjoy it as much as he does!

Overnight Irish Oatmeal

I have been cozying up to my crock pot a lot lately – it’s just so nice to be able to throw stuff in there and have it come together perfectly with barely any work at all. And I’d read that you can actually make oatmeal in a crock pot by fixing it the night before and setting it on low overnight. I love oatmeal and eat it almost every morning, especially during the colder winter months. I enjoy the Irish-style steel-cut oats the most, but they take so long to cook that I rarely make make time for them in my morning routine. So I decided to try cooking them in the crock pot overnight to see if I could make it work – and it did!!

The joining of my two passions…

As most of you know, dear readers, I live in Georgia. I’m not sure if you’ve heard, but there’s a little bit of a craze down here over a game called football. I grew up with two brothers, so it was pretty much a foregone conclusion that I would be a sports fan. I have a special place in my heart for one team in particular.

So on occasion I like to bring two of the great passions in my life together – football and baking – and make football cookies. So I wanted to share with my readers a collection of tips on how to make great football cookies for your next tailgate or Superbowl party.

Everything old is new again!

This wonderful treat came about because I had some eggnog left over from Christmas that was due to expire at the end of January, and I needed a way to use it up fast! After seeking a little bit of inspiration online, I dove into my old cookbooks and found a great Betty Crocker recipe for eggnog cake. It uses as its base this wonderful yellow cake recipe.

An Apple a Day

Hearty, Healthy Bran Muffins

This is a hearty, lightly sweet muffin that is packed with flavor and goodness! Nothing beats the crispy tops and the moist insides, studded with bursts of sweet raisins. You can mix them up the night before, put the batter in the fridge, and bake them up fresh in the morning. They also freeze well. They are wonderful with a thin pad of butter and a drizzle of honey, too.
