The World of Strawberry Shortcake

Strawberry Shortcake 2

Strawberry shortcake is a sure sign that summer is coming. We had our first of the season the other day at my in-laws’ house, and now I’m completely hooked. Hubby came home with 2 big pints of beautiful strawberries the other day, and I knew I had to request his famous strawberry shortcake.

The only thing better than a fresh banana cream pie? A banana cream pie whose crust is a giant chocolate chip cookie!! This is a fun recipe, great for parties, always a hit at a summer cookout or picnic.

Going Bananas

Banana puddin

One of my culinary inspirations growing up was Nathalie Dupree. Her cooking show on TV was one of my favorites, and to this day, I swear by her cookbook New Southern Cooking. But the best thing about her show was that things didn’t have to be perfect. She would spill a little flour on the counter, pick egg shells out of the bowl, or maybe get a few cake crumbs stuck in the frosting. But that was alright – it almost made it better, more homemade.

Chocolate Mint Paddies

Chocolate Mint Paddies

These are the perfect chocolate cookies, made only better by the molten chocolate mint candies that nest in the center of them. I am so glad that a friend recommended this recipe to me. You can tell just by reading it that it is a true retro recipe!

Banana Cupcakes with Classic Cream Cheese Frosting

Banana Cupcakes with Cream Cheese Frosting

I’m going to be completely honest with you, dear readers. I love to bake. But I also love to bake quickly. Nanny can tell you plenty of stories about how fast I can throw a pie together. So it makes perfect sense that some of my favorite recipes are what I like to call “dump and mix” recipes. Basically, the directions on these recipes read something like this:

“Preheat your oven and grease the pan. Dump all the ingredients into a bowl and mix well. Bake for 30 minutes and enjoy.”

Chew on This

Chewy 1

I think I need to start out by admitting the truth: I love Alton Brown. I have even considered going to stalk him in the finer grocery stores of north Atlanta. I’ve always been a bit of a science nerd, so his scientific approach to cooking and baking really appeals to me. I’ve been wanting to try his recipe for chewy chocolate chip cookies, and over the weekend, I got my chance! They turned out beautifully – fluffy, doughy, chewy, delicious.

Chocolate is a girl’s best friend!

Brownies 1

I know this post comes at a bad time for people like my mom, who gave up chocolate for Lent, but I was absolutely craving some gooey, rich, warm chocolate last week, and I had to make some brownies! I wanted to try out a new recipe that I’d seen in a magazine, but decided to make some major changes to it. These brownies turned out with a nice, deep chocolate flavor, delightfully crispy edges, and a moist, dense, and chewy texture.

Mardi Gras with Danish Ebelskivers

Ebelskivers 1

So: Ebelskiver. Say it with me: “able-skeever” – yes!

These delightful little pastries are actually spherical Danish pancakes that have a filling in the middle. Ebelskiver means “apple slices” in Danish, and you will sometimes see it spelled “aebelskiver.” As you might have guessed, apples are one of the traditional fillings that you will find inside an ebelskiver.
